Rarely does a place in business for almost 50 years change management and maintain the legend of old style and memories. But this is what Stewart Haverlack and partners have done with the established El Dorado Restaurant on Playa Los Muertos, where almost anyone who has ever been to Puerto Vallarta has had a meal or drink.

Delicate yet spicy flavors are combined with a masterful presentation. Signature appetizer Crisp Panko Calamari comes with a Chipotle Aioli dipping sauce.

This exuberant Latin-Asian restaurant (can we just call it "Lasian"?) feels a little like Buddha Bar set under a palapa. Owners Stewart and Monika Haverlack have managed to combine the tastiest elements of Mexican, Cuban, Brazilian, and Chinese cuisine—without even seeming like they're trying that hard.

It was very amazing and inspired this restaurant. His name was Juan and he went to culinary school in Guadalajara.
